My career had a massive boost when Fredy Girardet despite not over keen on taking on a young Englishman employed me as a Chef de Rang in December 1997, after two week break for Christmas I was not that keen to return, but as the saying goes, the rest is history, after 2 years when my good friend Jacky Vuillet moved on I became one of the Assistant Managers alongside Louis Villeneuve and Jean Louis Fouqueteau I spent 10 amazing years working along side so many great people, the list is too long to mention them all.
