One of the great moments in my career was when Nigel Plats Martin called me and asked me to go to Notting Hill and meet Brett Graham at the Ledbury.
Nigel went on to have an amazing five restaurants with a total of 7 Michelin stars!
I had worked for Nigel before at the original Square restaurant in King Street, St. James’s and that again with Phil Howard another amazing Chef, that was back in 1997.
I had no idea what it would lead to but in fact it was a few of the best years of my career, from the moment Brett came towards me with his amazing magnetic energy and whisked me around the corner for a coffee and a chat I knew he was someone very special, we went back to the restaurant through the kitchen, and I met a scary crew of Aussies who later became great friends, what a team, all focused on quality and guest experience and each one away with wonderful memories, nothing was to much from offering a surprise middle course, bread to take home and the visit to the kitchens the highlight to anyone’s visit.
Lets hope we see the Ledbury doing only what they can do soon again!
